Bean Salad with Tortilla Chips
Buffalo Chicken Sliders
Mac N Cheese (from a box!)

olive oil 1 red onion
all-purpose flour peppers, 1 each: red, yellow, green
White sugar cilantro
brown sugar 1 lime
cinnamon 6-8 medium apples
butter 2 lbs chicken breast
milk frozen pie crust
vanilla ice cream (optional with pie)
2 boxes Mac N Cheese
1 can black beans
1 can corn
red wine vinegar
Frank's buffalo hot sauce
1 dry Ranch dressing packet
Ranch dressing (optional topping)
This Black Bean Salad is a staple in the south. I vaguely remember it being called, "the poor man's caviar", and this recipe is from an old souther pal. Dice up the following ingredients, mix together, and add salt if you like! Serve with your favorite tortilla chip
Core and dice 1 red, 1 yellow and 1 green pepper.
1/2 Cup red onion
1 can corn, drained
1 can black beans, drained and rinsed
2 Tablespoons cilantro
1/4 Cup Olive Oil
4 Tablespoons Red Wine Vinegar
2 teaspoons lime juice

For the Buffalo Chicken Sandwiches, simply place 2 pounds of raw chicken in crockpot. Pour a 12 oz bottle of Franks Buffalo Wing Sauce on top. Sprinkle dry Ranch seasoning packet on top. Let cook 4 hours on low. Pull out breasts and shred. Place back in slow cooker for add'l hour to cook in the sauce. Serve with ranch dressing on slider buns!
Mac N Cheese - prepare as box instructs, or go wild and make your own from scratch.
The topping on this Apple Pie is what makes this a special treat! Peel and slice 6-8 medium apples. Place in a frozen pie crust. (You'll want the apples over flowing, so keep piling on those apples!) Sprinkle with 1 Tablespoon sugar and 1 teaspoon cinnamon. Mix 1 C flour, 1 stick melted butter (1/2 C) and 1/2 C brown sugar. Form thin patties of this doughy mixture and lay on top. See photo for before example. Cover your baking sheet with tinfoil to avoid spills. Bake at 425 degrees for 10 min, then reduce to 350 degrees for add'l 45 minutes or until top is golden brown. Delicious with Vanilla ice cream!
